Chicken piccata with parmesan cheese

List of Ingredients

For the chicken: 

  • 2 to 3 tablespoons of olive oil
  • 1 egg, beaten
  • 600 g chicken breasts, skinless and boneless and halved
  • 1 cup of bread crumbs
  • 1/3 cup of parmesan, grated
  • 1 cup of flour
  • 1 tablespoon of parsley, finely chopped
  • Black pepper
  • Salt

 

For the sauce:

  • 2 lemons juice
  • 2 tablespoons of capers
  • ½ cup of chicken stock
  • 2 tablespoons of butter
  • 1 tablespoon of parsley
  • Black pepper
  • Salt

 

Directions: 

  1. Combine the bread crumbs with parmesan and parsley in a shallow dish then mix them then set it aside.
  2. Combine the flour with a pinch of salt and pepper in a shallow dish then mix them and set it aside.
  3. Heat the olive oil in a skillet.
  4. Dust the chicken breasts in the flour then dip it in the betean egg and coat it with the bread crumbes.
  5. Sear the chicken breasts in the heated olive oil until they become golden brown from both sides then place them on a baking dish.
  6. Prehea the oven on 350 F.
  7. Bake the chicken for 15 min.
  8. In the mean time, melt the butter with lemon juice in a saucepan then stir into it the stock and whisk them.
  9. Add the in the capers with parsley, a pinch of salt and pepper.
  10. Serve the baked chicken breasts with the caper sauce and enjoy.
